As a result of the adoption of the mentioned law, designation Akhasheni cannot be used outside the area of geographical indication. The red wine variety Akhasheni has strict conditions: alcohol 10, 5-12%, sugar – 3-5/100 cm3, titratable acidity 5-7 g/dm3.
At the same time, Akhasheni wine, naturally, has its own production method. For instance, grapes are picked only when the level of sugar is above 22%. Grapes are trodden together with stalk-stripping.
Wine-material is produced by the means of partial fermentation of marc, sunken or floating “cap.” To ensure that the wine is sufficiently stable, it is pasteurized for 15-20 minutes inside the bottle, at the same time the temperature shall not be less than 65˚С.Red Semi-sweetMeat dishes, hard, aged sheep-cheese, fruit gateau, red fruits.Gastronomical pairing: -
